Custom fields can get globally set in the admin section. 

"Manage Custom Fields"

You can set 3 types of fields:
1- Text
2- Number
3- Multiple Choice

Custom fields can be sent to your CRM linking to the contact record. 

Your CRM can be linked to the custom fields in the integration section.
